Vidalia Onion Burger Recipe
1lb of ground beef
1lb of ground pork
1lb of ground turkey
1/2 cup of chopped fresh basil
1 cup of seasoned bread crumbs
1 egg
salt & pepper to taste
1 dash of season salt
1 cup of diced vidalia onions

Vidaila Onion Topping Recipe

Drippings from the burgers after cooking in a frying pan
1 cup chopped vidalia onions and a few green tops if availible
2 cups sliced baby portabello mushrooms
1/4 cup all pourpose flour
2 cups chicken broth
worchestershire sauce - 2 tble spoons
1/2 cup scotch whiskey
1/2 cup milk

Directions- fry burgers untill desired doneness. Sautee onions and mushrooms in left over drippings. Add flour then brown. Add chicken broth , then scotch and then milk, let simmer. should be a thick consitancy. Use as a topping on the burger when placed in the bun.



Clams Oconee with Vidalia Onions & Bacon

4 tbsp of butter
1 medium Vidalia Onion diced with green tops
4 tbsp of minced garlic
1 cup of beer
1 cup of white wine
1/2 cup crumbled bacon bits
1/4 cup parmesan cheese
2 tbsp fresh basil
2 tbsp sugar
4 tbsp boursin cheese
36 little neck clams

Heat pan over medium heat, add butter, swirling until it melts. Add chopped onion and minced garlic until onions are translucent. Add bacon, wine, beer and basil, boursin cheese and sugar, bring to a boil. Add clams (single layer) cover and cook until clams open, about 5-7 minutes. Remove clams with slotted spoon, scoop bacon and onion mixture into open clams, sprinkle with parmesan cheese and serve
